Leuconostoc bacteria was isolated from local pickled cabbage (Brassica oleracea capitata) and identified as Leuconostoc mesenteroides by morphology,biochemical and physiological. Because of the importance of domination in different areas, variant types of domination have been introduced according to the purpose they are used for.
