Functional yogurts enriched with plant-based bioactive compounds have emerged as promising dietary strategies to enhance human health. Objective: This study investigated the fortification of yogurt with Rhamnus alaternus fruit powder and its impact on quality characteristics, sensory attributes, and antioxidant activity. Methods: The current study involved preparing a powder from the fruit of the R. alternus plant, which underwent chemical and antioxidant analysis. Fresh buffalo milk was used to prepare yogurt, and products were fortified with the R. alternus powder. Results: R. alternus powder demonstrated significant improvements in taste, flavor, texture, color, and overall acceptability compared to the control. Conclusion: R. alternus powder demonstrated promising nutritional and antioxidant properties and significantly enhanced the sensory quality of fortified yogurt.
A new series of ?-D-glucose as Schiff bases derivatives is synthesized and characterized with studying their bioactivity. Hydroxyl groups at C (1,2&5,6) sugar moiety are converted into acetal form through a reaction with dry acetone using phosphoric acid and anhydrous zinc chloride as catalysts producing 1,2:5,6-di-O-isopropyledine ?-D-glucofuranose(I). The five memberd ring acetal of C(5,6) is hydrolyzed with acetic acid (65%)and a reaction of the new product with sodium periodate is carried on to get an aldehyde moiety which is used to produce a new series of Schiff bases through reacting with different amino compounds such as 4-amino antipyrene . The suggested chemical structures of the prepared compounds are confirmed by u

... Show MoreFour metal compounds mixed ligand of azo dye ligand (L) and metformin.(Met) were produced at aquatic ethanol for (1:1:1) (M:L:Met). The prepared compounds were identified by utilizing atomic absorption flame, FT.IR and UV–Vis spectrum manners as well as conductivity mensuration. These compounds was assayed of the gained datum the octahedral geometry was proposed into whole prepared complexes. Also in this research was studied represented examining the antibacterial and antifungal impact of the azo dye ligand (L), metformin.(Met) and (Co,Ni, Cu and Cd complexes) on four types of pathogenic, clinically isolated bacteria that are resistant to antibiotic, like Staphylococcus aureus, Staphylococcus epidermidis, Escherichia coli, Klebsiella pneu
